Goat’s Cheese gratin

Hello dear readers,

At the moment, I’m a bit obsessed with the delicious taste of goat’s cheese! I can have it on pizza, bruscetta, in salad or – like in this case – in a pasta gratin.

This particular pasta dish is very easy to make, great to prepare in advance or serves as a nice little treat on a Monday night. Plus, it is vegetarian so you can serve it as well to your veggie friends!

All you need for 4 people:

  • 500g Pasta
  • 150g baby spinach
  • 250ml single cream
  • 3 garlic gloves, crushed
  • 3 shallots finely cut
  • 150g Goats cheese, sliced
  • Olive oil
  • Salt, pepper, smoked paprika

Cook the pasta according to the instruction on the package, drain and put in an oven proof dish. In a little oil, fry the shallots for two minutes or until they get soft, add the crushed garlic and fry for one more minute. Pour the single cream over it, stir well and season well with salt, pepper and paprika. Mix in the spinach and cook at a low heat for one or two minutes. Add the mixture to the pasta, season again if necessary. Put the goat’s cheese slices evenly on top of the pasta mix and sprinkle with paprika. Cook in the oven for 15-20 min at 200 degrees or until the cheese starts to get some colour.

Goat’s cheese and spinach go very well with white wine so why don’t you try a chilled glass of fruity and light Chardonnay or Sauvignon Blanc with it? Enjoy!
