Instant Pizza Magic!

Wherever you are in the world, I hope you have better weather than we have it over here in the UK. It’s been a terrible rainy day and last weekend wasn’t exactly what I would call nice. But since we can’t change the weather we can at least try to make most out of it. What is better to lift your mood than some comfort food? For me personally nothing can beat a pizza! Since I’m too lazy to make it from scratch all the time, I’m cheating a little bit with this one. It doesn’t take longer than 7 min to cook and max 10 to prepare! Sounds good, right? This recipe is inspired by something I read online, but I pimped it up a good bit.

For 4 people you need:

  • 4 garlic & coriander Naans
  • 1 jar of tomato salsa
  • 1 jar of sun dried tomatoes, cut into smaller bits
  •  1 package of Mediterranean marinated feta cheese
  • 1 package of good quality mild cured prosciutto, cut in smaller pieces
  • Some fresh leaves such as rocket and baby spinach
  • Chilli oil

Preheat your oven according to the bread’s cooking instruction. Place the naans on a baking tray. Spread the tomato salsa on the base. Now arrange the prosciutto and the sun dried tomatoes even on your base. At last, cover with feta cheese. Now cook for ca. 5-7 min. Make sure the cheese starts to melt but the bread doesn’t get too dark.

Once the pizza is done, arrange rocket and baby spinach on top and drizzle some gorgeous chilli oil over it. As a tip instead of feta cheese you can use any other cheese such as mozzarella. If you want to go for a vegetarian option, just substitute the prosciutto by some roasted peppers (also available in a jar). This instant pizza version tastes delicious both hot and cold. I always make it in the evening and then have some leftovers for a lovely lunch the next day. Smart, right?
