Green Thai Curry à la Sarah

Last weekend, we had some lovely friends around and I decided to prepare my favourite Thai Curry. It’s a very easy and tasty recipe from my dear German friend Sarah; although the preparation requires some time because you have to peel and chop a few things in advance.

For 2-3 people you need:

  •  Soy sauce
  • Sesame oil
  • 1 green chilli, finely cut
  • 500g chicken breast, cut into cubes
  • 400ml coconut milk
  • 3-4 carrots, peeled and cut into sticks
  • 1 courgette, cut into fine slices
  • 1 red and 1 yellow pepper cut into chunks
  • Green Thai curry paste
  • Fresh coriander, chopped
  • 1 bunch of spring onions cut in fine rings

Before you start preparing the vegetables, marinate the chicken: cut it in into cubes and give it in a bowl. Add soy sauce and finely cut chilli. Wisk well and leave aside for a while.

Prepare your veg. Heat some sesame oil in a deep frying pan and add the chicken. Fry for a few minutes, and then add carrots, peppers and courgette. Fry all together for 5 min. Now add the coconut milk and 2 teaspoons of Thai curry paste. Stir well. If it is not hot enough for you, add a few more spoons until you are happy with it. Now let it simmer for 10-15 minutes until the vegetables are nice and tender.  In the last minute before serving, add the spring onions (we don’t want them to be too soft) and mix well.

Best served with rice and sprinkle some fresh coriander on top. Bon appetite!
