Creamy Pasta with Bacon and melted Cherry Tomatoes

I don’t know why but for some reason I experience massive bacon cravings recently. I could eat it with salads, soups and – just as in this really nasty case – with pasta. It is a bloody easy recipe but it is one of my favourite pasta dishes ever.

All you need to two people is:

  • 250g Pasta
  • 200g smoked bacon, cut in bite-size bits
  • 1 Red Onion, finely chopped
  • 1 Package Cherry Tomatoes
  • 200g Crème fraiche
  • Salt, Pepper, mixed Herbs such as Parsley and Chive

First cut the bacon and fry it in a tiny bit of oil until it is really crispy. Make sure you get rid of some of the juice while frying since it will take longer with all the juice. Once it’s done, put it aside and fry the onions in the very same pan until soft. Start cooking your pasta according to the instruction. Once the onions are done, add the tomatoes and wait until they melt in the pan. Once this point is reached, add crème fraiche, season well with salt, pepper and mixed herbs. Save some herbs for garnishing. When you are happy with your sauce, add the bacon. Now dish the pasta with the sauce and drizzle some herbs and fresh grounded pepper on top. Delicious!
