Cherry Tomato and Salmon Spaghetti

This is one of my favourite pasta dishes! It’s incredible easy but also incredibly yummy. 

Per person you need:

  • 150g Spaghetti
  • 300g Cherry Tomatoes
  • 100g Smoked Salmon
  • 2-4 Crushed Garlic Gloves
  • Parmigiano-Reggiano Cheese
  • Olive Oil
  • Fresh Grounded Pepper, Dried Chillies (optional)

Cut the salmon into small pieces. Heat olive oil in a pan and fry garlic for a few seconds on a medium heat. Add the tomatoes and cook all together until the tomatoes start to melt. Turn the heat off and leave the tomatoes aside for a moment. Cook spaghetti according to the instructions. Just before you drain them, take a mug and fill it with the cooking water from your pasta. I will explain in a second for what reason.

Once your pasta is drained, place it back in the pot on low heat and drizzle olive oil on top. We can be quite generous with the oil this time since we don’t have any other sauce base. Now mix the hot pasta with the tomatoes and add some of the cooking water you left aside, stir well. You don’t have to use all of the water, just as much as it takes to make the pasta nicely moist. By the way, the thing with the cooking water is a great tip from Nigella Lawson. The water contains starch and will make your pasta deliciously smooth and luscious. You can do that with all sorts of pasta dishes, especially with pesto. It’s really worth trying.

Once you mixed pasta and tomatoes, it is time for some seasoning. I always use a bit of hot dried chillies, depending on how hot you like your food. Add  salt and fresh grounded pepper. Once you’re happy with your pasta and you are ready to dish, blend the salmon pieces with your pasta. A few seconds are enough for the small bits of smoked salmon to cook.

After you dished your pasta, garnish your plate with some fresh grated Parmigiano-Reggiano cheese or any other Italian hard granular cheese.

Now we’re ready to roll. By the way, pasta is always great if you’re going out and have a few drinks. It is the perfect base for alcohol. Enjoy your weekend!
