Baby Spinach and Feta Cheese Salad

I love spinach! I could eat that all-round talent in every form each day. The variation I’m going to present today is a light summery version. It goes very well as a side dish with grilled meat or fish or as a main for lunch. It is also a great salad for taking with you to work. If you plan on doing that, just make sure you mix it straight before you eat and not at home. The night before, I prepare the feta and tomatoes and put them in a separate box so for lunch I only have to mix the ingredients together. For the dressing you can use whatever you feel like or whatever your canteen has to offer. I love the already mixed dressings from Morrisons, especially sweet balsamic and herbs because I think spinach and balsam vinegar go very well together.

You need for one person (as a main)

  • 70-80g baby spinach (I go for the already washed one)
  • Half a feta cheese
  • A hand full of Cherry Tomatoes
  • Fresh Grounded Pepper
  • Balsam Vinegar
  • Olive Oil
  • Half a Red pepper (optional)

Cut tomatoes into halves and the feta into small cubes. Pepper the tomatoes. Arrange spinach leaves on a plate, put feta and tomatoes on top. Drizzle olive oil and balsam vinegar (or any other dressing you prefer) over it. Season well with fresh grounded pepper. That’s it. Serve with some ciabatta or baguette.
